A user has asked us the following:
“I need to know the cooking time and temperature to use for preparing mini chicken rolls (about 6 cm in diameter by 10 cm long).”
Our Chef has replied:
My recommendation for cooking would be as follows. If the rolls are made with chicken breast, the cooking time would be 60 minutes at 65ºC starting at a temperature of 4ºC (from the fridge). If the rolls are made with chicken legs or thighs, they should be cooked for 80 minutes at 65ºC. Once cooked, leave them to rest for 10 minutes before putting them into the chiller or inverted bain-marie to cool down.
