We received the following question in our “Ask the chef” section.
“Hello. I want to prepare a 6 kg sea bass with butter, parsley in branches, onion slices, and lemon slices flavoured with salt and white pepper. How long and at what temperature should I cook it?”
This was the answer given by our chef Enrique Fleischmann.
“Hello,
It would be important to know if the bass is whole or not, if it has bone,… but generally, I recommend that you cook it at a temperature of 70 ºC. I can’t tell you about the time since I have no reference to the thickness. But to give you an idea, for 6 kilos of bass, you would need to cook it for 35-45 minutes.
