One user sent us the following question:
How can we solve the problem of broken bags, particularly in products that include large bones, such as beef ribs or ossobuco?
This was the answer given by our chef, Enrique Fleischmann.
We also had this same problem at our chain of restaurants, and we were able to solve it thanks to two different steps:
- Try to file down the bones as much as possible.
- Use the soft decompression option available on the vacuum packing machine (the Sammic vacuum packing machine has a soft decompression programme). This helps the plastic bag to adapt better to the contours of the bones, thus ensuring that the decompression is not aggressive and does not lead to the possible breakage of the vacuum bag.
