How can I cook meats which require different cooking times simultaneously?
Enrique Fleischmann, our corporate chef, gave the following answer.
“To cook meats which have different cooking times simultaneously, you will need to use the same temperature and different times. That is, you would need to standardize the meats in terms of the time at one single temperature and, once that time is up, remove the meat and finish each one perfectly, if necessary. To do this, find a temperature average that can be standardized using the needle probe or by trial and error.”
