Pork sirloin with pear compote and herb-infused oil

Pear compote

Ingredients:

  • 1 ripe pear
  • 1g of nutmeg
  • 3 peppercorns
  • 2 cloves
  • 3 g of salt

Preparation:

First, chop the pear and pack it with the rest of the ingredients. Then cook the mixture in the SmartVide at 80 ºC for an hour and a half. To finish, blend it and put it to one side.

Thanks to this technique, the compote is optimally cooked and has much more taste.

Herb-infused oil

Ingredients:

  • 1 sprig of rosemary
  • 1 sprig of basil
  • 20g of chives
  • 25g of parsley
  • 100 ml of virgin olive oil

Preparation:

Blend everything and put to one side.

Pork sirloin

Ingredients:

  • 1 pork sirloin
  • 10g of salt

Preparation:

First, clean the sirloin thoroughly and add salt. After that, vacuum pack it and cook in the SmartVide at 59 ºC for 50 minutes, thus achieving the ideal cooking point and the desired interior temperature.

Finally, seal it in a very hot pan and serve it.
