When we talk about SmartVide, we say they can work in up to 56 lt. / 14 gal. or 28 lt. / 7 gal. containers. But this container must allow water movement so that the performance of the sous-vide cooker is the expected one. What is the amount of food we can heat in a SmartVide immersion circulator when using a GN2/1 container, or a GN1/1 container? What is the real capacity, in food, of a SmartVide immersion circulator?
To obtain capacity, in food, of a Sammic SmartVide sous-vide cooker, we have packed food in 200gr. / 1/2 lb. individual portions and placed them in 56 and 28 lt. (14 gal / 7 gal) tanks.
After carrying out the tests, we have come to the conclusion that SmartVide immersion circulators can work at full performance with 120 individual 200gr. / 1/2 lb. portions when using a 56 lt. / 14 gal. water bath, and 60 individual 200gr. / 1/2 lb. portions when using a 28 lt. / 7 gal. water bath. This means that Sammic SmartVide stirrer circulators can heat up to 24 Kg. / 50 lb. of individually packed food in 56 lt. / 14 gal. containers and up to 12 Kg. / 25 lb. in 28 lt. / 7 gal. containers.
This capacity will increase when working with a smaller quantity of bigger portions.
